A delicious salad loaded with antioxidants

True to be told, I am not a huge fan of radicchio. It’s simply too bitter. So when I came across this recipe I wasn’t too enthusiastic about it at first. What made me try it out was the presence of avocado and the vinaigrette. This perfect blend of ingredients tones down the bitterness of the radicchio and makes you feel full and satisfied. Radicchio is loaded with antioxidants and vitamin K, Avocado, which has recently achieved notoriety thanks to the ubiquitous avocado toast, is filled with healthy fatty acids that can help keep the weight in check, especially for women, and anchovies are loaded with Omega 3. What more can you ask from a salad?

  • One radicchio head chopped as you please

  • One avocado not too ripe and chilled cut into pieces

  • A couple of anchovies or more if you like

  • A tablespoon of capers 

  • Champagne or white vinegar 2 tbs

  • Olive oil 3 tbs

  • Pepper 

Make the vinaigrette by smashing the anchovies and mixing in the capers, olive oil, vinegar and pepper. Add it to the chopped radicchio and avocado, fold it gently and voila’!
