A flavorful salad with forbidden rice

I've been making this salad for quite some time, and it remains one of my favorites. It’s packed with ingredients that I love, keeps you feeling satisfied for hours, and leaves you light and energized. Plus, it’s loaded with antioxidants, essential minerals, and vitamins, making it a nutritional powerhouse.

The ingredients are simple yet incredibly nourishing: parsley, celery, walnuts, and forbidden rice—also known as Venus or black rice. Once revered by the Chinese for its unique health benefits, black rice contains significantly more protein and antioxidants than any other variety. It’s also rich in fiber and iron. Among its antioxidants, anthocyanins, flavonoids, and carotenoids stand out for their powerful anti-inflammatory and anti-aging properties.

Celery is another essential ingredient, offering a wealth of antioxidants, including vitamin C, beta-carotene, and flavonoids, along with important phytonutrients that support gut health. Parsley, also brimming with antioxidants, is an excellent source of vitamin K, which plays a crucial role in bone health. Finally, walnuts provide a fantastic plant-based source of omega-3 fatty acids, thanks to their nutrient-dense, heart-healthy oils.

Forbidden Rice Salad Recipe

Ingredients:

  • 1 bunch of parsley, coarsely chopped

  • 1 cup of forbidden rice, cooked in broth or water

  • 2 stalks of celery, chopped

  • ⅓ cup walnuts, lightly roasted

Dressing:

  • 2 tbsp buttermilk

  • 2 tbsp lemon juice

  • 2 tbsp sherry vinegar

  • 3 tbsp olive oil

  • Salt and pepper to taste

Instructions:

  1. In a large bowl, combine the chopped parsley, cooked forbidden rice, celery, and roasted walnuts.

  2. In a separate small bowl, whisk together the buttermilk, lemon juice, sherry vinegar, olive oil, salt, and pepper until well blended.

  3. Drizzle the dressing over the salad and toss gently to combine.

  4. Serve fresh and enjoy!
