A flavorful salad with forbidden rice

I have been making this salad for quite some time. It has all the things I love, it makes you feel satiated for quite a while, keeping you light and energetic. It has lots of antioxidants and other essential minerals and vitamins. 

The ingredients are very simple: parsley, celery, walnuts and forbidden rice, also known as venus or black rice, which was revered by the Chinese for its unique properties and nutritional values. In fact, black rice has way more protein and more antioxidants than any other rice, but also fiber and a good amount of iron. Among the antioxidants in black rice, anthocyanins, flavonoids and carotenoids are great for their anti-inflammatory and anti-aging properties. Celery is another important vegetable to consume regularly as it’s also loaded with antioxidants, like Vitamin C, beta carotene and flavonoids, but also important phytonutrients essential for gut health. Lastly, parsley, also filled with antioxidants, is packed with vitamin K which is important for bone health, and walnuts, with their fabulous oils, are super nutritious and are a great plant source of omega 3.

Black rice or forbidden rice, has more protein and antioxidants than any other rice.

Here is the recipe…

For the salad you need:

  • 1 bunch of parsley coarsely chopped

  • 1 cup of forbidden rice cooked in broth or water

  • 2 stalks of celery chopped

  • ⅓ of a cup of walnuts lightly roasted

For the dressing:

  • 2 tbsp of buttermilk

  • 2 tbsp lemon juice

  • 2 tbsp sherry vinegar

  • 3 tbsp olive oil 

  • Salt and pepper to taste

Mix it all together and enjoy it.
