A super green cucumber avocado salad

Yesterday I went out for dinner to one of those restaurants where you feel like you should try everything because it all looked so special. I admit it, I probably ordered one too many things. Although I had a wonderful culinary experience, bursting with flavors, I felt like I needed to go green - as in salad-only-green - for the next two days! So yesterday was day one and I treated myself to a delicious and nutrient-rich salad that involves all of my favorite ingredients: avocados, cucumbers and lots of cilantro and parsley.

Avocados are particularly good when you need a gut cleansing as they contain as much as 14 grams of fiber, which is excellent for gut health. Cucumber, which contains lots of fiber and water, promotes gut health and hydration: it's incredibly refreshing, cleansing and beneficial for the skin. Cilantro, one of my favorite herbs, which I add to any meal I can, hot or cold, is a rich source of antioxidants, and it also lowers blood sugar levels. Lastly, parsley, another constant in my meals, also rich in antioxidants, helps with bloating and to release excess water from the body.

Now that we have looked into some of the benefits let’s look at the recipe: mix 2 avocados, sliced as you please,  two big cucumbers also cut in whichever way you like, a bunch of finely chopped parsley and cilantro, some lightly roasted sesame seeds (keep an eye on them as they burn fast), two tablespoons of toasted sesame oil, one of olive oil, one of rice vinegar (or two if you like it more pungent), a tablespoon of honey, one of soy sauce, and some black pepper. Mix it well and enjoy!

It’s perfect by itself as the avocados make it very rich and filling or as a side.
