A mint pistachio dip to brighten your day
Whenever I visit the Middle Eastern market in Santa Monica, I never leave without a generous bunch of fresh mint leaves—their vibrant green color and fragrant aroma are irresistible. I also make sure to grab a bag of Turkish pistachios, which, in my opinion, are some of the most buttery and flavorful you can find.
While I often use the mint in my tea—it's fantastic for digestion—I also love finding new ways to incorporate it into everyday recipes. One of my all-time favorites? A refreshing mint and pistachio dip that's perfect for a light and healthy afternoon snack.

This dip is not only incredibly flavorful, but it’s also packed with health benefits. Mint is known for its anti-inflammatory properties, while pistachios bring both anti-inflammatory and antioxidant goodness. Greek yogurt adds protein and gut-friendly probiotics, and the full-fat feta provides a rich source of calcium.
Here’s what you’ll need to make this creamy, nutrient-packed dip:
1 cup of shelled pistachios
1 cup of fresh mint leaves
1½ cups of full-fat feta cheese (preferably the block, not the crumbly kind)
1 cup of Greek yogurt
2 tablespoons of fresh lemon juice
Zest of one lemon
½ cup of extra virgin olive oil
Instructions:
Blend all ingredients together in a food processor until smooth. If the mixture is too thick, add a bit of cold water to reach your desired consistency. Serve chilled with fresh chopped veggies, whole grain crackers, or warm pita bread.
