This mint pistachio dip will brighten up your day

Anytime I go to the middle eastern store in Santa Monica I make sure to get a bunch of fresh mint leaves, which always looks and smells wonderful, as well as turkish pistachios, which, in my view, are very buttery. I know I am going to use it in my tea as it greatly helps with digestion, but I pretty much find many dishes I can make use of the fragrant leaves. One of those is a mint and pistachio dip, which is one of my favorites in the afternoon on weekends when I want an easy, but also healthy snack. This dip not only is delicious, but it is also beneficial for gut health, because it has mint, which has anti-inflammatory properties, pistachio that have both anti-inflammatory as well as antioxidant properties, greek yogurt, which is not only a good source of protein, but it is also great for gut health as it contains probiotics, and feta, which is loaded with calcium.

This dip has mint and the pistachio both having anti-inflammatory properties

Here is what you need to make this fabulous dip:

  • 1 cup of pistachios

  • 1 cup of mint leaves

  • 1 and a ½ cups of full fat feta (not the crumbly one) 

  • 1 cup of greek yogurt

  • 2 tbsp of lemon juice

  • Lemon zest

  • ½ cup of olive oil 

Blend all the ingredients together, add a bit of cold water if the mixture is too thick, enjoy with fresh chopped veggies.
